Steak in the oven
This is a great way to cook a steak when you need to do it indoors.
- 1 Steak 1-1.5" thick is best.
- 1 tbsp olive oil
- SPG (salt, pepper, garlic)
Heat pan on stove at medium heat. Cast iron is great, but other pans can work fine too. Add oil.
Place the steak in the pan. Sear on each side for 2-3 minutes. Remove from the heat.
Place in a 350 oven until the internal temperature reaches 130-135. Remove and rest for 10 minutes. I think 130 degrees is ideal "medium rare". I sometimes pull them from the oven at 128 because they will carry over a few degrees when out of the oven. 135 is still excellent, but some of the pinkness is gone. It depends on personal preference.
Basting with butter at the end is an optional, but nice, touch. If you want to get really fancy, you can put some rosemary and thyme in the butter.
I also like "Holy Cow" seasoning as a substitute for SPG. It has coarse pepper and other seasonings that really taste great on a steak.
There are other things that you can do to make it more elegant, like sautéed mushrooms, or a blue-cheese compound butter.
