Trim the excess skin off of the chicken thighs. Wash and pat dry, and lay them out on a cookie sheet.
Apply the rub to all sides of the thighs. It's really great if you can get some of the rub underneath the skin.
Smoke for 30 minutes (If you don't have a smoker you can skip this step)
Turn up the heat to 350, and cook for about 30 minutes, or until 140 degrees
Turn up the heat to 450, and cook for another 10 minutes, or until 165 degrees. This step helps make the skin crisp.
