Instructions
Preheat the oven to 400 degrees and adjust the oven rack to the lowest position
Toss potatoes with oil, salt, pepper, garlic, oregano, and thyme in a bowl. Arrange on a rimmed cookie sheet
Roast potatoes in the oven until tender and golden brown - about 30 minutes. If not done after 30 minutes, increase temp to 425 and cook for another 5-10 minutes.
