This is in here just in case we lose the manual. Getting this dialed in is still a work in progress. We have gotten lazy, and Trader Joe's frozen pizza dough has been our go-to for homemade pizza.
Stir yeast and sugar into warm water and let stand until foamy, about 5-10 minutes.
Insert metal blade, put flour and salt in the work bowl and turn on the machine.
Pour yeast mixture through feed tube and process about 45 seconds, until dough pulls away from sides of the bowl.
Add olive oil through the feed tube and process 60 seconds longer.
If dough sticks to sides of the bowl, add more flour, 1 tablespoon at a time, processing for 10 seconds after each addition, until dough leaves sides of the bowl but remains soft.
Roll dough on floured surface into a circle, rotating and turning dough often and using enough flour so it doesn't stick.
If dough resists rolling, let it rest for a few minutes and try again.
Oil pan lightly and sprinkle with cornmeal.
Fold dough in half loosely and then in half again.
Position point at the center of the pan and gently unfold. Press into place.
Fold the 1" overhang and shape it into a rim

Note: we found this rim somewhat dry, and now we baste on some butter and parmesan for softness and flavor.
