Pickled Red Onions with Jalapenos
This easy recipe for pickled onions will add zest to many dishes.
- 2 large red onions
- 1 cup Apple cider vinegar
- 1 cup sugar
- 1 cup water
- 2 tsp kosher salt
- 1 jalapeno, sliced
Add the water, cider vinegar, sugar and salt to a medium pot and bring to a boil. Whisk until the sugar is dissolved.
Place the sliced red onions and jalapenos in mason jars. (2 1-quart mason jars should be about right).
Pour the hot liquid over the onions. Allow the onions to soften and cool, and then screw on the lid and store in the refrigerator.
