Mediterranean Bread Salad

Ingredients
  

Salad
  • Two handfuls toasted rustic bread cubes no explanation so I cubed up some Italian bread, drizzled it with a little olive oil, and broiled it on low for 5-10 minutes
  • ½ of a head of romaine lettuce rough chop
  • Large handful of “power greens” – I used part of a box of Spring Mix
  • Large handful of cherry tomatoes halved, or one large tomato, diced
  • Two small or a half of a large cucumber large dice
  • 1/3 of a red or white onion diced (I did about 1/3 cup as onion sizes vary)
  • 1/2 of a red pepper diced
  • Handful of Greek feta cheese
  • Handful of chopped pistachios
Dressing (option: double recipe to make 1/4 cup - our preference)
  • 1/8 cup Olive Oil
  • 1/8 cup Red wine vinegar
  • 1 t Italian seasoning

Method
 

  1. Mix all of the above together except for the dressing ingredients
  2. Add dressing ingredients to small separate bowl and whisk
  3. Add to salad
  4. Season with salt and pepper to taste

Makes two large servings or four small side salads
