Two handfuls toasted rustic bread cubesno explanation so I cubed up some Italian bread, drizzled it with a little olive oil, and broiled it on low for 5-10 minutes
½of a head of romaine lettucerough chop
Large handful of “power greens” – I used part of a box of Spring Mix
Large handful of cherry tomatoeshalved, or one large tomato, diced
Two small or a half of a large cucumberlarge dice
1/3of a red or white oniondiced (I did about 1/3 cup as onion sizes vary)
1/2of a red pepperdiced
Handful of Greek feta cheese
Handful of chopped pistachios
Dressing (option: double recipe to make 1/4 cup - our preference)
1/8cupOlive Oil
1/8cupRed wine vinegar
1tItalian seasoning
Instructions
Mix all of the above together except for the dressing ingredients
Add dressing ingredients to small separate bowl and whisk
Add to salad
Season with salt and pepper to taste
