Instant Pot Beef Barbacoa

Ingredients
  

Chipotle Sauce
  • 3 chipotle peppers in adobo sauce individual peppers in the can - NOT the whole can
  • 2 tsp adobo sauce from the can
  • 3 Tbsp lime juice about 1 lime
  • 1 Tbsp "Better than Bouillon Beef Base"
  • 1/3 cup apple cider vinegar
  • 5 clovers garlic roughly chopped
  • 3 tsp ground cumin
  • 2 tsp oregano Mexican oregano, if you have it
  • 1/4 tsp ground allspice
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 cup beef broth reduced sodium is best
Barbacoa
  • 4 lb beef chuck roast
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 Tbsp vegetable oil
  • 1 yellow onion
  • 4 oz can diced green chiles drained
  • 3 Tbsp tomato paste
  • 1 cup beef broth reduced sodium preferred
  • 2 bay leaves
  • 1 lime

Method
 

Make the Chipotle Sauce
  1. Add all chipotle sauce ingredients to a food processor or blender, and process until smooth. Set aside.
Make Beef Barbacoa
  1. Trim large sections of fat from the roast. Cut into 6-8 pieces. Season with salt and pepper.
  2. Sear the beef - either in a pan or in the Instant Pot. Put the vegetable oil in the pan, and get it hot. Cook each side of the beef chunks for 1 to 2 minutes, until browned. I did this step, but I think it's optional.
  3. Remove the beef and set it aside. Add the onions to the pan and saute until soft. 2-3 minutes.
  4. Add 1 cup beef broth to the pan, and scrape the bottom to get all of the good stuff off the bottom.
  5. Add in tomato paste, green chiles and bay leaves.
Instant Pot Cooking
  1. Put the pan mixture in the bottom of the Instant Pot. Add the beef, and then pour the chipotle mixture over the top.
  2. Close the lid
  3. Select "Manual" or "Pressure Cook" and set the timer for 60 minutes.
  4. Remove beef pieces to a bowl, and shred.
  5. Toss shredded beef with as much of the cooking liquid as you'd like.
Slow Cooker Cooking
  1. Put the pan mixture in the bottom of the slow cooker. Add the beef, and then pour the chipotle mixture over the top.
  2. Cover and cook and low for 8-10 hours, until beef is tender enough to shred easily
  3. Remove beef pieces to a bowl, and shred.
  4. Toss shredded beef with as much of the cooking liquid as you'd like.
