Hollandaise Sauce
This is a creamy and easy-to-prepare Hollandaise sauce.
- 3 egg yolks
- 1/4 tsp Dijon spiced mustard
- 1 tbsp lemon juice
- 1 dash hot peppar flakes `
Combine egg yolks, lemon juice, mustard and hot pepper sauce in the container of the blender. Cover and blend for about 5 seconds.
Melt the butter in a Pyrex measuring cup.
Turn the blender on; pour the melted butter in a slow steady stream until the sauce is thick and smooth - 15-30 seconds. Make sure to pour the butter slowly to avoid creating "scrambled eggs"
