Mince seeded and chopped habanero as much as possible (I used food processor on chop).
Add minced garlic.
Add a healthy pinch of salt.
Remove from food processor and continue to mash with cutting knife on cutting board until it becomes a fine paste.
Set aside.
In separate bowl combine egg yolk, mustard, and lemon juice-whisk together.
Combine oils and slowly add to egg yolk mixture while mixing.
Whisk garlic/habanero mixture into bowl.
Refrigerate to allow flavors to meld.
