2boneless skinless chicken thighs or one breastdiced. You can also use leftover cooked chicken.

Instructions
Cook rice according to package directions, again the day before is best
In large pan over medium/high heat, scramble eggs in 1t oil with salt and pepper. Remove from pan and set aside.
Add 1t more oil and stir fry chicken with a sprinkle of salt and pepper. Add 1T soy sauce, garlic, carrot, onion, and 2T butter and stir fry until onions are translucent. Add scallions and stir fry 1 minute. Add rice, salt, pepper, 3T soy sauce, and sesame seedds.
Create well in middle of rice and add 2T butter. After 2 minutes add egg back in and stir.
Notes
Note: this makes a LOT of fried rice. Recipe can be easily halved.
