Chicken, Bacon and Avocado Chopped Salad

Ingredients
  

  • 6 slices bacon, cooked and diced
  • 4 ounces crumbled blue cheese
  • 1 cup halved cherry tomatoes
  • 1 head Romaine lettuce, chopped about 8 ounces
  • 1 large avocado, diced
  • 1 pound diced cooked chicken about 2-3 cups
  • 1/2 small red onion, very thinly sliced
Red Wine Vinaigrette
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1 1/2 tsp Dijon mustard
  • 1 tsp Italian seasoning
  • fine sea salt and freshly-cracked black pepper pinch of each

Method
 

  1. Whisk all vinaigrette ingredients together vigorously in a bowl (or shake in a sealed jar) until emulsified.
  2. Combine all salad ingredients in a large mixing bowl. Drizzle with the vinaigrette and toss gently.
  3. Serve immediately.
