Breakfast Casserole (Gluten Free)

Ingredients
  

  • 3/4 lb. of meat bacon, sausage, ham, or combination
  • 3/4 cup chopped onion
  • 1/2 cup green bell pepper chopped (did not use)
  • 12 eggs
  • 1 cup milk
  • 1 - 16 ounce pkg. frozen hash browns - thawed
  • 6 ounces shredded cheddar cheese
  • 2 teaspoons salt
  • 1/2 tsp. pepper
  • 1/2 tsp. dill weed

Method
 

  1. Sauté meat (if needed) and add onion (and green pepper, if used). Set aside.
  2. Whisk together the 12 eggs, milk, salt, pepper, and dill weed. Add the meat and onions and green pepper, hash browns, cheese, to the egg mix.
  3. Combine thoroughly.
  4. Pour into 9x13 baking dish. Spread the mixture around in the baking dish to even it out. Bake at 375 degrees F for 45 - 60 minutes - checking until a knife inserted into the middle comes out clean.
  5. Can be cooked ahead, wrapped tightly in foil, add 1/2 cups chicken broth and reheat.
