Black Bean and Chipotle Corn Salad

Ingredients
6
ears of corn
grilled, and corn cut from the cob
14
ounce
can of black beans
rinsed and drained
1
red or Vidalia onion, diced
2
limes, squeezed to get lime juice
3
tbsp
olive oil
1
can
chipotle chiles, finely chopped
salt and pepper
Instructions
Put the corn, beans, and onion in a large bowl. Add the lime juice, olive oil and chopped chipotle chile and toss well to combine.
Season to taste with salt and pepper.
Serve at room temperature.
