Roasted New Red Potatoes

Ingredients
  

  • 3 pounds small red new potatoes Cut into bite-size pieces
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme

Method
 

  1. Preheat the oven to 400 degrees and adjust the oven rack to the lowest position
  2. Toss potatoes with oil, salt, pepper, garlic, oregano, and thyme in a bowl. Arrange on a rimmed cookie sheet
  3. Roast potatoes in the oven until tender and golden brown - about 30 minutes. If not done after 30 minutes, increase temp to 425 and cook for another 5-10 minutes.
