Hollandaise Sauce

This is a creamy and easy-to-prepare Hollandaise sauce.

Ingredients
  

  • 3 egg yolks
  • 1/4 tsp Dijon spiced mustard
  • 1 tbsp lemon juice
  • 1 dash hot peppar flakes `

Equipment

  • Blender or Cuisinart

Method
 

  1. Combine egg yolks, lemon juice, mustard and hot pepper sauce in the container of the blender. Cover and blend for about 5 seconds.
  2. Melt the butter in a Pyrex measuring cup.
  3. Turn the blender on; pour the melted butter in a slow steady stream until the sauce is thick and smooth - 15-30 seconds. Make sure to pour the butter slowly to avoid creating "scrambled eggs"
