Habanero Aioli

Ingredients
  

  • 2 habaneros seeded and chopped fine (we used three for a bit of BAM!)
  • 2 t minced garlic
  • 1 large egg yolk
  • 2 t fresh lemon juice
  • ½ t Dijon mustard
  • ¼ c extra virgin olive oil
  • 3 T vegetable oil

Method
 

  1. Mince seeded and chopped habanero as much as possible (I used food processor on chop).
  2. Add minced garlic.
  3. Add a healthy pinch of salt.
  4. Remove from food processor and continue to mash with cutting knife on cutting board until it becomes a fine paste.
  5. Set aside.
  6. In separate bowl combine egg yolk, mustard, and lemon juice-whisk together.
  7. Combine oils and slowly add to egg yolk mixture while mixing.
  8. Whisk garlic/habanero mixture into bowl.
  9. Refrigerate to allow flavors to meld.
