Blue Cheese Corn Salad

Ingredients
  

  • Corn cut from 6 ears grilled corn, or 2 cans of whole kernel corn
  • 3 green onions sliced thin (white & green parts)
  • 3/4 cup sour cream
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons lemon juice
  • Dash hot sauce
  • Salt & pepper

Method
 

  1. Put corn and onions in a large bowl.
  2. Whisk together the dressing ingredients and pour over the corn.
  3. Toss the mixture and season with salt and pepper, adding another tablespoon or two of lemon juice or a bit more hot sauce if desired.
  4. Eat at once or chill before serving.
