Shrimp, Asparagus, and Sesame Pasta
Ingredients
- 1/2 lb. asparagus cut into 3/4 inch pieces
- Salt & pepper
- 2 T. sesame seeds
- 3 garlic cloves chopped
- 2 scallions cut 1/4 inch Long
- 1 lb. raw medium shrimp shelled
- 1 walnut-sized piece of fresh gingerroot chopped
- 1/2 lb. angel hair pasta or rice
- 1/4 cup vegetable oil
- 3 T. dry sherry
- 1 T. sesame oil
Instructions
- Stir fry asparagus and set aside.
- Toast sesame seeds 2-3 minutes in fry pan and set aside
- Cook pasta and set aside
- Stir fry shrimp in oil with garlic and gingerroot.
- Add sherry and cook 1-2 minutes.. Add back the asparagus and reheat.
- Add pasta.
- Add the scallions and toss until hot, 30-60 seconds.
- Remove from the heat, sprinkle with the sesame oil, and taste for seasoning.
- On individual serving plates sprinkle with sesame seeds.
