Breakfast Casserole (Gluten Free)

Ingredients
  

  • 3/4 lb. of meat bacon, sausage, ham, or combination
  • 3/4 cup chopped onion
  • 1/2 cup green bell pepper chopped (did not use)
  • 12 eggs
  • 1 cup milk
  • 1 - 16 ounce pkg. frozen hash browns - thawed
  • 6 ounces shredded cheddar cheese
  • 2 teaspoons salt
  • 1/2 tsp. pepper
  • 1/2 tsp. dill weed

Instructions
 

  • Sauté meat (if needed) and add onion (and green pepper, if used). Set aside.
  • Whisk together the 12 eggs, milk, salt, pepper, and dill weed. Add the meat and onions and green pepper, hash browns, cheese, to the egg mix.
  • Combine thoroughly.
  • Pour into 9x13 baking dish. Spread the mixture around in the baking dish to even it out. Bake at 375 degrees F for 45 - 60 minutes - checking until a knife inserted into the middle comes out clean.
  • Can be cooked ahead, wrapped tightly in foil, add 1/2 cups chicken broth and reheat.
