Smoked Chicken Thighs
Ingredients
- Pack of chicken thighs
- Barbecue rub - Jamaican Jerk and Chipotle BBQ rubs are very popular at our house, but it all depends on what you're in the mood for.
Instructions
- Trim the excess skin off of the chicken thighs. Wash and pat dry, and lay them out on a cookie sheet.
- Apply the rub to all sides of the thighs. It's really great if you can get some of the rub underneath the skin.
- Smoke for 30 minutes (If you don't have a smoker you can skip this step)
- Turn up the heat to 350, and cook for about 30 minutes, or until 140 degrees
- Turn up the heat to 450, and cook for another 10 minutes, or until 165 degrees. This step helps make the skin crisp.
