Tomato Pie

Ingredients
  

  • 9 inch pie crust
  • 4-5 seeded tomatoes
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. basil 4-5 fresh basil leaves
  • 1/4 cup fresh chives or green onion
  • 1/2 cup mayo
  • 2 cups shredded sharp cheddar cheese. * See Note

Instructions
 

  • Bake pie crust at 425 degrees for 5 minutes.
  • Remove from oven. Reduce heat to 400 degrees.
  • Line pie crust with tomato slices about 1/4 inch thick.
  • Sprinkle with salt, pepper, basil and chives.
  • Mix mayo and cheeses -- spread mixture over tomatoes to seal edges.
  • Bake at 400 degrees for 30-35 minutes

Notes

Diane uses 3 different cheeses - feta parmesan, Colby cheddar. You can use whatever cheese you want to experiment with as long as it is 2 cups or more. She probably uses more than 2 cups.)
