Tomato Pie
Ingredients
- 9 inch pie crust
- 4-5 seeded tomatoes
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. basil 4-5 fresh basil leaves
- 1/4 cup fresh chives or green onion
- 1/2 cup mayo
- 2 cups shredded sharp cheddar cheese. * See Note
Instructions
- Bake pie crust at 425 degrees for 5 minutes.
- Remove from oven. Reduce heat to 400 degrees.
- Line pie crust with tomato slices about 1/4 inch thick.
- Sprinkle with salt, pepper, basil and chives.
- Mix mayo and cheeses -- spread mixture over tomatoes to seal edges.
- Bake at 400 degrees for 30-35 minutes
Notes
Diane uses 3 different cheeses - feta parmesan, Colby cheddar. You can use whatever cheese you want to experiment with as long as it is 2 cups or more. She probably uses more than 2 cups.)
