Chicken Fried Rice
Ingredients
- 2 cups jasmine rice uncooked (best if prepared and refrigerated a day earlier)
- 2 t olive oil
- 4 eggs
- 2 boneless skinless chicken thighs or one breast diced. You can also use leftover cooked chicken.
- 4 T soy sauce divided
- 2 cloves garlic minced
- 1 carrot diced small
- ½ yellow onion diced small
- 3 scallions sliced
- ¼ butter divided
- ½ t kosher salt
- 1 t pepper
- 2 T sesame seeds
Instructions
- Cook rice according to package directions, again the day before is best
- In large pan over medium/high heat, scramble eggs in 1t oil with salt and pepper. Remove from pan and set aside.
- Add 1t more oil and stir fry chicken with a sprinkle of salt and pepper. Add 1T soy sauce, garlic, carrot, onion, and 2T butter and stir fry until onions are translucent. Add scallions and stir fry 1 minute. Add rice, salt, pepper, 3T soy sauce, and sesame seedds.
- Create well in middle of rice and add 2T butter. After 2 minutes add egg back in and stir.
Notes
Note: this makes a LOT of fried rice. Recipe can be easily halved.
