Caprese Pasta Salad
Ingredients
- 3 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 2 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups cherry tomatoes halved
- pound fresh mozzarella pearls or pieces
- 12 oz rotini pasta, or other pasta of your liking
- 1/2 cup fresh basil leaves torn
Instructions
- In a medium bowl, add olive oil, vinegar, garlic, salt and pepper. Stir together until combined.
- In a large bowl, add the tomatoes and mozzarella.
- Drizzle most of the dressing on top reserving a few tablespoons for later.
- Stir together until combined.
- Cover and set in the refrigerator to marinate for 30 minutes.
- While marinating, bring water to a boil in a medium saucepan. Cook pasta al dente. Drain and drizzle pasta with olive oil. Stir, cover and set aside to cool.
- Remove bowl from refrigerator. Add pasta, basil and remaining dressing to the bowl.
- Stir together and serve. Cover leftovers and store in refrigerator up to 3 days.
