Caprese Pasta Salad

Ingredients
  

  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups cherry tomatoes halved
  • pound fresh mozzarella pearls or pieces
  • 12 oz rotini pasta, or other pasta of your liking
  • 1/2 cup fresh basil leaves torn

Instructions
 

  • In a medium bowl, add olive oil, vinegar, garlic, salt and pepper. Stir together until combined.
  • In a large bowl, add the tomatoes and mozzarella.
  • Drizzle most of the dressing on top reserving a few tablespoons for later.
  • Stir together until combined.
  • Cover and set in the refrigerator to marinate for 30 minutes.
  • While marinating, bring water to a boil in a medium saucepan. Cook pasta al dente. Drain and drizzle pasta with olive oil. Stir, cover and set aside to cool.
  • Remove bowl from refrigerator. Add pasta, basil and remaining dressing to the bowl.
  • Stir together and serve. Cover leftovers and store in refrigerator up to 3 days.
