Fish Fingers in the Air Fryer

Ingredients
  

  • 1/2 cup Flour
  • 2 Tbsp Holy Voodoo seasoning Or your favorite seasoning blend
  • 1/2 cup Panko bread crumbs
  • 2 eggs, beaten
  • 1 lbs Fish filets Cod, Pollock, Tilapia - any mild white fish
  • Cooking oil spray
  • Tartar sauce for serving
  • Lemon wedge for serving

Instructions
 

  • Combine the flour and the seasonings.
  • Trim the fish into strips - about 1" wide. Dry with a paper towel (important for crispiness)
  • Do a 3-step coating for each fish strip: a) flour/spice, b) egg, c) panko bread crumbs. Place the strips on a plate while heating the air fryer. Spray both sides of the fish strips with oil.
  • Air fry at 400, turning halfway through until crispy and lightly golden - about 10 minutes. Only fill one layer of air fryer, leaving airspace between the strips. Do two batches if needed.

Notes

Note: If multiple batches are needed, you can put the finished fish in the oven at 250.
