Breakfast Slider Sandwiches

Ingredients
  

  • 12 dinner rolls or Hawaiian sweet rolls
  • 9 eggs scrambled, and seasoned to taste. I added a few red pepper flakes, but even a little tabasco or Choloula could had more flavor.
  • 6 slices ham dice into 1/2 inch cubes
  • 6 slices white cheddar cheese dice into 1/2 inch cubes
  • 6 strips cooked bacon chopped into small pieces
  • 3 oz baby spinach cook in microwave for 45 seconds to release some of the water from the leaves.
  • 2 tablespoons butter melted
  • 1 teaspoon black pepper
  • "Everything But the Bagel" seasoning

Instructions
 

  • Preheat the oven to 350°F (180°C).
  • Scramble the eggs and season to your liking. I prefer to keep them on the moister side since they'll be in the oven for another 20 minutes. I also added 1/4 cup of 1/2-n-1/2 to make them creamier.
  • Slice the rolls in half lengthwise. Place the bottom half in a 9 x 13-inch (23 x 33 cm) rimmed baking dish. Spread the eggs evenly over the rolls, then add the ham, cheddar, bacon, and spinach. Top with the remaining rolls.
  • Slice the rolls into individual sandwiches. I find it easier to slice them prior to cooking them.
  • Brush the tops of the rolls with melted butter and sprinkle the pepper and "Everything but the Bagel" on top. Bake for 20 minutes, or until the bread is golden brown. Re-slice into individual sliders, then serve.
