Roasted New Red Potatoes
Ingredients
- 3 pounds small red new potatoes Cut into bite-size pieces
- 1/4 cup olive oil
- 1 tsp salt
- 1 tsp black pepper
- 4 cloves garlic minced
- 1 tsp dried oregano
- 1 tsp dried thyme
Instructions
- Preheat the oven to 400 degrees and adjust the oven rack to the lowest position
- Toss potatoes with oil, salt, pepper, garlic, oregano, and thyme in a bowl. Arrange on a rimmed cookie sheet
- Roast potatoes in the oven until tender and golden brown - about 30 minutes. If not done after 30 minutes, increase temp to 425 and cook for another 5-10 minutes.
