Pickled Red Onions with Jalapenos

This easy recipe for pickled onions will add zest to many dishes.

Ingredients
  

  • 2 large red onions
  • 1 cup Apple cider vinegar
  • 1 cup sugar
  • 1 cup water
  • 2 tsp kosher salt
  • 1 jalapeno, sliced

Instructions
 

  • Add the water, cider vinegar, sugar and salt to a medium pot and bring to a boil. Whisk until the sugar is dissolved.
  • Place the sliced red onions and jalapenos in mason jars. (2 1-quart mason jars should be about right).
  • Pour the hot liquid over the onions. Allow the onions to soften and cool, and then screw on the lid and store in the refrigerator.
