Pickled Red Onions with Jalapenos
This easy recipe for pickled onions will add zest to many dishes.
Ingredients
- 2 large red onions
- 1 cup Apple cider vinegar
- 1 cup sugar
- 1 cup water
- 2 tsp kosher salt
- 1 jalapeno, sliced
Instructions
- Add the water, cider vinegar, sugar and salt to a medium pot and bring to a boil. Whisk until the sugar is dissolved.
- Place the sliced red onions and jalapenos in mason jars. (2 1-quart mason jars should be about right).
- Pour the hot liquid over the onions. Allow the onions to soften and cool, and then screw on the lid and store in the refrigerator.
