Black Bean and Chipotle Corn Salad
Ingredients
- 6 ears of corn grilled, and corn cut from the cob
- 14 ounce can of black beans rinsed and drained
- 1 red or Vidalia onion, diced
- 2 limes, squeezed to get lime juice
- 3 tbsp olive oil
- 1 can chipotle chiles, finely chopped
- salt and pepper
Instructions
- Put the corn, beans, and onion in a large bowl. Add the lime juice, olive oil and chopped chipotle chile and toss well to combine.
- Season to taste with salt and pepper.
- Serve at room temperature.
