Black Bean and Chipotle Corn Salad

Ingredients
  

  • 6 ears of corn grilled, and corn cut from the cob
  • 14 ounce can of black beans rinsed and drained
  • 1 red or Vidalia onion, diced
  • 2 limes, squeezed to get lime juice
  • 3 tbsp olive oil
  • 1 can chipotle chiles, finely chopped
  • salt and pepper

Instructions
 

  • Put the corn, beans, and onion in a large bowl. Add the lime juice, olive oil and chopped chipotle chile and toss well to combine.
  • Season to taste with salt and pepper.
  • Serve at room temperature.
