Pulled Pork Jalapeno Poppers

These Jalapeno poppers are a great appetizer, and don't let the heat scare you. With the seeds scooped out of the jalapeno peppers, the heat is subdued and mild.

Ingredients
  

  • 8 Jalapeno peppers, large
  • 8 oz cream cheese warm to room temp or microwave until soft
  • 2 tbsp BBQ rub I used a mild, general purpose rub, but you can use whatever you like.
  • 1 lb Bacon, thin sliced Approx 15 slices
  • 8 oz Pulled pork

Method
 

  1. Prepare the jalepeno peppers. Cut the stem off of the top. Cut them in half length-wise, and scoop out the seeds and interior parts using a teaspoon. Take precautions to protect yourself from the heat of seeds and juices. I wore nitrile gloves and goggles.
  2. Spread cream cheese into each jalapeno half. Make it level with the jalapeno - not heaping.
  3. Apply a coat of BBQ rub
  4. Place about 1 tbsp of pulled pork on top of the cream cheese.
  5. Wrap a piece of bacon around the jalapeno popper, and sprinkle with more BBQ rub.
  6. Cook at 225-250 for 90 minutes.
