Frito Chili Pie

Ingredients
  

  • 1.5 lb. ground chuck or ground turkey
  • 3 cloves garlic minced (optional)
  • 1 can 12-14 ounce size tomato sauce
  • 1 can 10-ounce Ro-tel (diced tomatoes and chilies)
  • 1/2 tsp. salt
  • 1 tsp. ground oregano
  • 4 tsp. ground cumin
  • 4 tbsp. chili powder more to taste
  • 1/4 c. corn meal
  • 1/2 c. warm water
  • bag of Fritos
  • Grated sharp cheddar cheese
  • Diced red onion optional

Method
 

  1. Brown ground turkey with garlic in a pot over medium-high heat. Add tomato sauce, Rotel, salt, oregano, cumin, and chili powder. Cover and reduce heat to low. Simmer for 30 minutes.
  2. Mix corn meal with water, then add to the chili. Stir to combine and simmer for a final 10 to 15 minutes. Set aside.
  3. Place Fritos in the bottom of an individual soup bowl. Pile in chili and cheese, and diced onion if using. Serve immediately.
