Fish Tacos with Fruit Salsa

Ingredients
  

  • Oil
  • 12 taco shells
  • 1 T. fresh lime juice
  • 4 skinless boneless fish fillets (snapper suggested) (2 lb), cut into 1 inch pieces
  • 6 scallions chopped
  • 3 cups lettuce
  • 3 cups avocado and tropical fruit salsa see below

Method
 

  1. Heat oil and fry tacos shells until a shade darker, about 1 minute.
  2. Transfer to paper towels to drain and season with salt. (WE DO NOT FRY SHELLS)
  3. Whisk together lime juice, 3 T. oil, and salt and pepper to taste for dressing.
  4. Season fish with salt and pepper.
  5. Heat remaining oil in a large nonstick skillet over moderately high heat until hot but not smoking, then saute scallions, stirring, 1 minute.
  6. Add fish and saute, stirring occasionally, until just cooked through, about 3 minutes.
  7. Remove skillet from heat.
  8. Toss lettuce with dressing and salt and pepper to taste.
  9. Fill Tacos with lettuce, fish mixture, and salsa
