Chicken Caesar Salad

Ingredients
  

Chicken
  • 1 lb chicken thighs, boneless, skinless chicken
  • salt, pepper, garlic powder for seasoning
Salad
  • 1.5 cups croutons
  • 3/4 cup parmesan cheese grated
  • 8 cups romaine lettuce washed, dried
Dressing
  • 1 cup mayonnaise
  • 1/4 cup parmesan cheese grated
  • 3 tablespoons lemon juice
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons dijon mustard
  • 2 clovers garlic minced

Method
 

Croutons
  1. Dice baguette bread into bite-sized chunks.
  2. Coat with olive oil and salt, pepper, garlic and parmesan to taste
  3. Broil for 5 minutes and let cool.
Chicken & Salad
  1. Season and cook the chicken thighs on the grill to 165-170 degrees.
  2. Combine all of the dressing ingredients and set aside.
  3. Once cooled, cut chicken into bite-sized pieces
  4. In a large bowl, cut romaine lettuce into bite size pieces. Add croutons, parmesan cheese, and prepared chicken. Top with dressing and toss.
