Twice Baked Potatoes with Creamed Cheese

Ingredients
  

  • 1 bag baking potatoes - 10 - 12
  • 1 - 8 oz. pkg. cream cheese
  • 1 small onion chopped fine
  • 1 egg whipped gently, (Optional)

Method
 

  1. Wash potatoes and bake in a 400 degree oven for 1 hour. Take from oven and cut out an oval lengthwise on the potato. With a soup spoon, scrape out all of the white potato without tearing the potato skin.
  2. Mash the potatoes with a little milk. Add cream cheese and butter.
  3. Salt and pepper to taste.
  4. With soup spoons, scoop the mashed potato mixture back into the potato skin.
  5. Top with grated cheese and/or bacon. Return to oven for 15 minutes
  6. At this point they can be frozen for use at a later date. Frozen potatoes take about 1 hour at 400 to reheat.
