Wash potatoes and bake in a 400 degree oven for 1 hour. Take from oven and cut out an oval lengthwise on the potato. With a soup spoon, scrape out all of the white potato without tearing the potato skin.
Mash the potatoes with a little milk. Add cream cheese and butter.
Salt and pepper to taste.
With soup spoons, scoop the mashed potato mixture back into the potato skin.
Top with grated cheese and/or bacon.
At this point they can be frozen for use at a later date. Frozen potatoes take about 1 hour at 400 to reheat.
