Twice Baked Potatoes with Creamed Cheese

Ingredients
  

  • 1 bag baking potatoes - 10 - 12
  • 1 - 8 oz. pkg. cream cheese
  • 1 small onion chopped fine
  • 1 egg whipped gently, (Optional)

Instructions
 

  • Wash potatoes and bake in a 400 degree oven for 1 hour. Take from oven and cut out an oval lengthwise on the potato. With a soup spoon, scrape out all of the white potato without tearing the potato skin.
  • Mash the potatoes with a little milk. Add cream cheese and butter.
  • Salt and pepper to taste.
  • With soup spoons, scoop the mashed potato mixture back into the potato skin.
  • Top with grated cheese and/or bacon.
  • At this point they can be frozen for use at a later date. Frozen potatoes take about 1 hour at 400 to reheat.
