Chicken Caesar Salad
Ingredients
Chicken
- 1 lb chicken thighs, boneless, skinless chicken
- salt, pepper, garlic powder for seasoning
Salad
- 1.5 cups croutons
- 3/4 cup parmesan cheese grated
- 8 cups romaine lettuce washed, dried
Dressing
- 1 cup mayonnaise
- 1/4 cup parmesan cheese grated
- 3 tablespoons lemon juice
- 2 teaspoons Worcestershire sauce
- 2 teaspoons dijon mustard
- 2 clovers garlic minced
Instructions
Croutons
- Dice baguette bread into bite-sized chunks.
- Coat with olive oil and salt, pepper, garlic and parmesan to taste
- Broil for 5 minutes and let cool.
Chicken & Salad
- Season and cook the chicken thighs on the grill to 165-170 degrees.
- Combine all of the dressing ingredients and set aside.
- Once cooled, cut chicken into bite-sized pieces
- In a large bowl, cut romaine lettuce into bite size pieces. Add croutons, parmesan cheese, and prepared chicken. Top with dressing and toss.
