Blackened Walleye Sandwich

Makes enough for 4 sandwiches

Ingredients
  

Sauce (Note: Instead of making the sauce, we often use Blue Plate Hot & Spicy Mayo, and it's excellent. It can be purchased on Amazon)

  • 1/4 cup mayonnaise
  • 1 tbsp sweet pickle relish (optional)
  • 1 tbsp grainy mustard
  • 1 tbsp ketchup
  • 2 tsp hot sauce

Fish & Assembling the sandwich

  • 20 ounces walleye fillets A 4-5 ounce fillet makes a nice sandwhich
  • 4 tsp cajun seasoning Dizzy Pig Bayouish blackening recommended
  • Spray oil
  • 4 brioche buns
  • 4 leaves romaine lettuce
  • 4 slices red onion

Instructions
 

  • Set up the Big Green Egg for direct cooking and heat to 350 degrees. Place the cast iron pan, or plancha, on the grate, and let it come up to temp.
  • Make the sauce: In a small bowl combine the mayo, relish, mustard, ketchup and hot sauce. Set aside for serving.
  • Season the fillets with the Cajun seasoning.
  • Cook the fillets: Spray some oil on the plancha/pan. Place the fillets on the pan for 3-4 minutes. Flip and cook for another 3-4 minutes. They should get to 140 degrees. The time difference is dependent on the thickness of the fillet. If they are thin, go towards the 3-minute end of the spectrum.
  • Put some butter on the buns and brown them. This can be done on the grill, under a broiler or in an air fryer.
  • Assemble the sandwiches with a bun, fillet, sauce, lettuce, and red onion.
  • Serve with your favorite side dish.

Notes

One shortcut for this recipe is to use a pre-made sauce.  One option is to use a spicy mayo.  Blue Plate is a mayo brand based in New Orleans, and they have a spicy version that can be purchased on Amazon.  Search for "Blue Plate Hot & Spicy Mayonnaise".  It goes great on a blackened fish sandwich, and it's much easier than making the sauce in the recipe.
