French Onion Grilled Cheese
Makes two sandwiches
Ingredients
- 3 tablespoons unsalted butter, divided
- One small yellow onion thinly sliced
- One teaspoon of fresh or dried thyme leaves chopped
- Kosher salt and freshly ground black pepper
- 1.5 teaspoon Worcestershire
- 2-4 slices of sharp Cheddar cheese
- 2-4 slices Swiss cheese
- Four 1-inch slices of sourdough bread
- 1 Tablespoon mayonnaise for each sandwich
Instructions
- Heat 2 tablespoons of butter in a medium skillet over medium heat. Add the onions and sprinkle with the thyme, 1/2 teaspoon salt, and several grinds of pepper. Cook, occasionally stirring, until the onions are browned and tender, about 20 minutes. Turn off the heat and transfer the onions to a bowl adding the teaspoon of Worcestershire sauce, and set aside.
- Assemble sandwich: cheese/onion/cheese. Spread mayo on the outside of the bread pieces.
- Add a Tablespoon of butter to the skillet and griddle the sandwich over medium heat until golden brown on the first side, about 5 minutes. Flip and cook until the cheese is melted and the exteriors are crispy, about 5 minutes more.
