Red Potatoes in the air fryer

This is a great way to get roasted potatoes into the menu without the long cook-time of a conventional oven.

Ingredients
  

  • 1.5 pounds small unpeeled red potatoes, quartered
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme

Instructions
 

  • Preheat air fryer to 380. Drizzle potatoes with oil and garlic. Sprinkle with oregano, thyme, salt and pepper; toss gently to coat.
  • Place on ungreased tray in air-fryer basket. Single layer. Cook until potatoes are golden brown and tender. 10-12 minutes, stirring once.
