Pistachio and Cranberry Goat Cheese Log

Ingredients
  

  • 8 oz goat cheese log
  • 1/3 cup shelled pistachios
  • 1/3 cup dried cranberries
  • 1 Tbsp dried herbs of choice such as rosemary or thyme

Instructions
 

  • Combine shelled pistachios, dried cranberries, and fresh herbs on a plate. Evenly disperse the ingredients to ensure the goat cheese is covered evenly with all ingredients.
  • Inwrap the goat cheese log, and roll in the ingredients on the plate. You may need to gently press some of the pistachisand cranberries to the goat cheese log to ensure they stick.
  • Return to the refrigerator to firm it all up. About 30 minutes should do!
  • Serve with crackers and toasted baguette!
