Southwest Chicken Thighs with Lime and Cilantro

Ingredients
  

  • 1 lb of boneless skinless chicken thighs, trimmed
  • 4 tbsp olive oil divided
  • 1 lime juiced and zested
  • 1/4 cup cilantro leaves chopped
  • 3-4 cloves garlic minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper

Instructions
 

  • Mix the marinade ingredients together
  • Place chicken and marinade in a ziploc bag, and mix everything together so that the chicken pieces are coated. Let it sit for 30 minutes or more - up to overnight.
  • Grill the chicken thighs until they reach an internal temp of 170-175.
  • Serve however you like...great on salads or in a "Chipotle bowl".
