Southwest Chicken Thighs with Lime and Cilantro
Ingredients
- 1 lb of boneless skinless chicken thighs, trimmed
- 4 tbsp olive oil divided
- 1 lime juiced and zested
- 1/4 cup cilantro leaves chopped
- 3-4 cloves garlic minced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Instructions
- Mix the marinade ingredients together
- Place chicken and marinade in a ziploc bag, and mix everything together so that the chicken pieces are coated. Let it sit for 30 minutes or more - up to overnight.
- Grill the chicken thighs until they reach an internal temp of 170-175.
- Serve however you like...great on salads or in a "Chipotle bowl".
