Pulled Pork Jalapeno Poppers
These Jalapeno poppers are a great appetizer, and don't let the heat scare you. With the seeds scooped out of the jalapeno peppers, the heat is subdued and mild.
Ingredients
- 8 Jalapeno peppers, large
- 8 oz cream cheese warm to room temp or microwave until soft
- 2 tbsp BBQ rub I used a mild, general purpose rub, but you can use whatever you like.
- 1 lb Bacon, thin sliced Approx 15 slices
- 8 oz Pulled pork
Instructions
- Prepare the jalepeno peppers. Cut the stem off of the top. Cut them in half length-wise, and scoop out the seeds and interior parts using a teaspoon. Take precautions to protect yourself from the heat of seeds and juices. I wore nitrile gloves and goggles.
- Spread cream cheese into each jalapeno half. Make it level with the jalapeno - not heaping.
- Apply a coat of BBQ rub
- Place about 1 tbsp of pulled pork on top of the cream cheese.
- Wrap a piece of bacon around the jalapeno popper, and sprinkle with more BBQ rub.
- Cook at 225-250 for 90 minutes.
